Title:  Cherie’s Classic Summer Potato Salad    

 

Ingredients:

 

Solid Ingredients

 

6 medium sized red potatoes

7 small hard-boiled eggs (or 6 jumbo eggs)

16 Sweet pickles, chopped (sweet gherkins preferred) vary to taste

½ cup chopped sweet onions (Vidalia onions preferred if in season)

 

Sauce Ingredients

 

1 cup miracle whip

1 tablespoon milk

1 tablespoon yellow mustard

¾ tablespoon cider vinegar

¾ tablespoon sugar

3 tablespoons sweet gherkin pickle juice

Salt to taste

 

Directions:

 

Boil potatoes with skins on until done (don’t over cook).  Boil eggs for twenty minutes.  Skin the potatoes and cut into pieces.  Salt potatoes to taste.  Add onions.  Add hard-boiled eggs that have been cut into pieces.  Add chopped sweet gherkin pickles.

 

Mix sauce ingredients well.  Pour sauce onto potato/egg mixture and mix well.

 

Be sure and taste sauce before adding to the potato/egg mixture.  It is easier to get the correct taste by adjusting the sauce than adjusting the finished potato salad.  Sauce should have a nice tangy bite to it.

 

Serves about 8 people
