Ingredients:
3/4 cup
vinegar
3/4 cup sugar
3/4 cup water
1 1/2
teaspoons salt
3/4 to 1
teaspoon pepper
One large
onion thinly sliced
Two cans of
beets, undrained (131/4 ounce cans)
Sliced green
onions (optional)
Directions:
In a saucepan, combine the first six ingredients; bring to
a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat; add
beets. let stand at room temperature for 1 hour. Cover and chill 6 hours or
overnight. Garnish with green onions if desired. Yield: 6 servings.
