Ingredients:
Two to three packages of pearl onions (10 ounce pkgs.; white or yellow
or both)
Four tablespoons butter.
Four tablespoons flour.
1/2 teaspoon salt (or to taste).
1/4 teaspoon pepper (or to taste).
Two cups of milk (two percent or lowfat milk works well).
A dash of garlic seasoning (for example, Misty’s original seasoning) --
Optional
Crumbs of Ritz crackers or onion flavored Toasteds -- Optional
Directions:
To prepare the onions, blanche them for about one minute
in boiling water and then squeeze them so that the main part of the onion pops
out of the skin (there are usually directions in the package). This is much
easier than peeling them the old-fashioned way.
In a saucepan, melt the butter and then add the flour,
salt and pepper. Mix to form a roux.
Add the milk (and dash of optional garlic seasoning) and increase the heat.
Constantly stir until the white sauce boils and thickens. Immediately remove
from heat and add the well-drained onions and stir into the white sauce. Add the mixture to a casserole dish and bake
for about 30 minutes at 325 degrees.
The optional cracker crumbs can be added after about 20 minutes.
