1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cups sugar
3 tablespoons butter (can use margarine)
1 egg slightly beaten
1/2 cup milk
Topping:
1/2 cup sugar
2 teaspoons cinnamon
butter
Directions:
Combine flour, baking powder (not soda), salt,
and sugar in a mixing bowl. Seperately
combine milk, egg, and melted butter (don't scorch
butter).
Mix the wet ingredients with the dry (don't use a blender or mixer) and
stir until all the flour is moistened (batter will be lumpy).
Spread batter in a greased 9x9 in pan or baking
dish (you can use a dish that gives you about 81 square inches - we used a
rectangular one that
was 8x11 or something like that). Combine the topping ingredients, sugar and
cinnamon) and sprinkle over the top.
Dot the top with butter
and place in a preheated oven at 375
degrees. Bake for about 25 to 30 minutes. A toothpick stuck into the cake should come
out clean. (no
batter sticking to it). Let cool but serve warm.
You can vary this recipe by including raisins in
the batter. (Pour boiling water over
the raisins and let sit for 5 minutes to plumpen then
drain thoroughly.) You can also top with 1/2 cup brown sugar, 2 tablespoons flour, 2
teaspoons cinnamon, butter, and 1/2 cup chopped
walnuts (although then it becomes a
snickerdoodle).
