Ingredients:
2 Cups Sugar
1 Cup Light corn syrup
1/3 Cup water
2 1/2 Cups Coarsely chopped salted cashews
1/2 Cup Butter
2 tsp Baking soda
Directions:
Butter 2 large cookie sheets. Combine sugar, syrup and
water in a 3 qt. microwaveable mixing bowl. Microwave on full 8-10 minutes,
stirring twice, until soft ball stage, 234-240 degrees. Stir in cashews.
Microwave on high 10-12 minutes, until hard crack stage. Stir in butter and
baking soda. Pour half of mixture onto sheet and spread thinly. Repeat with
other half. Cool completely. Break into pieces. Store in airtight container.
